Nothing ushers in the hot, sultry days of summer like a refreshing salad made from farm-fresh ingredients and perfectly picked fresh oranges. Orange Olive Salad with Balsamic Vinaigrette marries the tangy flavors of fresh oranges with the alternatingly bitter, salty taste of black olives and bright red onions.

The result is a wonderfully delicious, healthy side dish perfectly balanced to create a symphony of flavors. The fragrant, unmistakably sharp taste of balsamic vinaigrette marries all the flavors nicely. Pair your salad with a lean piece of smoky meat fresh off the grill and you have the perfect summer meal.

Despite being composed mainly of water and carbs in the form or simple sugars, — glucose, fructose, and sucrose — oranges have many important health benefits as they are a healthy source of fiber, vitamin C, thiamine, folate, and antioxidants. And despite their sugar content, oranges have a low glycemic index (GI) of 31–51.

Black olives are a healthy source of monosaturated fat, which may help reduce the risk of atherosclerosis and increase good cholesterol. Black olives are also an excellent source of vitamin E, which is known to help neutralize free radicals in body.

Orange Olive Salad with Balsamic Vinaigrette

Serves 6-8 side servings

Ingredients

  •  3 tablespoons olive oil
  • 1 full dropper of 500 mg orange flavored CBD oil per serving
  •  3 tablespoons orange juice
  •  1/4 cup + 1 tablespoon balsamic vinegar
  •  1 large clove garlic, minced
  •  salt and pepper to taste
  •  dash crushed red pepper
  •  4 large oranges
  •  1/2 red onion
  •  1 cup large olives, halved (a little less than 1 can)
  •  chives, chopped, optional garnish

Instructions

  1. In a jar or Tupperware with a tight light, combine the dressing ingredients: olive oil, orange- flavored CBD oil, orange juice, balsamic vinegar, garlic, salt, pepper, and crushed red pepper. Shake it vigorously until all the dressing ingredients are combined uniformly.
  2. Slice the oranges into 8 segments, then cut each segment into thirds. (See photos)
  3. Half the red onion and save the other half for another use. Cut the half in half, then slice it thinly. You should be able to break the slices apart into segments.
  4. Slice the olives in half. You can use the trick of placing several of them in between 2 Tupperware lids, pressing your hand down on the top, and sliding your knife across the middle. Or just cut them one at a time.
  5. In a medium bowl, combine the oranges, red onion, and olives. JUST before serving, pour on as much of the dressing as you like. I didn’t use all of it.
  6. Garnish with chopped chives and serve!
